Pumpkin & Blueberry Quinoa-Oatmeal

Ingredients
- 2 1/2 C almond milk
- 1 t cinnamon
- 1/2 t cardamom
- 1 vanilla bean (seeded)
- 2 C quinoa
- 1/2 (15oz can) pumpkin
- 1 C blueberries
- 1/4 C sliced almonds
- 4 T almond butter
- 2 T honey
Directions
- In a blender whip together milk, spices, vanilla bean seeds, 1T honey, pumpkin
- Scoop cooked quinoa (warm) evenly into serving bowls and pour 1/2-2/4C cold pumpkin milk over the top.
- Garnish with blueberries, sliced almonds, 1T of almond butter and a drizzle of honey.
